Gellan Gum

What is Gellan Gum?

Gellan gum is a hydrocolloid produced by microorganism Sphingmonas elodea. Gellan gum is manufactured by fermentation from a carbohydrate source(glucose). Deacylation is carried out by treating the product with alkali. It is available in two forms, high acyl (HA) and low acyl (LA). High acyl commonly found in dark yellow powder, meanwhile low acyl commonly found in white powder. 

 

Functionality & Application?

Gellan gum is widely used as a gelling agent, thickener, binder, stabilizer, emulsifier, and suspending agent. You can easily found its application in soft candy, jellies, juices, ice cream, Plant-based beverages.

Gellan gum is particularly popular in vegan foods because it's a plant-based alternatives to gelatin. It helps stabilize fat, suspend insoluble parts (including mineral fortification) and also build mouthfeel / texture.
